We welcome you into our home with open arms! Immediately, you will feel part of our family and our traditions. We begin our welcome, the same way my abuela did with me, with hot chocolate and pan. I love to share my stories and traditions of my culture with you. Classes can be in spanish or english. Our class will take place in our beautiful outdoor kitchen, located on our terrace. You will learn to prepare food and cook in a traditional Oaxaqueña kitchen, called a brasero - a traditional brick stove, with open fire. We will get busy in a hands-on cooking experience where you will learn to prepare appetizers, traditional drinks, salsas and main dishes. In the culmination of our hard work, we will share in a group meal around the table with food, drink, stories, laughter, love and of course, mezcal. We look forward to connecting with you over food and flavor; one of my cultures oldest traditions.

Pulque Tour Plus: Aguamiel Harvest in the Field with Zapotec Dinner

Pulque Tour Plus: Aguamiel Harvest in the Field with Zapotec Dinner

Even Oaxacans rarely if ever have an opportunity to accompany an indigenous family into the fields for the aguamiel harvest. And most, certainly of the middle classes, typically don’t ever have a chance to break bread with them. You do it all, learning about pulque first hand, assisting in the phases of production, and spending a couple of hours chatting, learning, eating and drinking, and listening to music, all right in their home alongside members of their family.

Cooking in the Campo: Tamales

Cooking in the Campo: Tamales

We´ve narrowed down our tamale repertoire to 4 for this experience: the quintessential black bean tamal, the “chepil” tamal (a locally-grown herb with a distinct flavor quite typical in certain Oaxacan cuisine), the tamal de rajas, cooked with strips of just-the-right-amount-of-spice pepper strips, and the pumpkin flower and “quesillo” (Oaxacan string cheese) tamal. You´ll take a tour of Juana´s property and get to meet the milpa and the animals, and then you´ll get to work preparing your tamales. Juana has already done us the favor of heading to the mill to have the corn ground so that this experience can be nestled into a single day. She´ll go through the preparation process with you, step-by-step, and you´ll get to practice making each of the four types of tamales.
