What To Expect
Make your way to the neighborhood of Coyoacan, which was once home to the artists Frida Kahlo and Diego Rivera, with cobblestone streets and colonial-era homes. Meet a cook at her private house, where you’ll have the chance to cook alongside her in the kitchen, preparing recipes passed down by her father and grandfather.
Like Mexican cuisine, the menu changes with season and availability of ingredients, but you’ll make two or three typical dishes such as chilaquiles (lightly fried corn tortillas) or quesadillas stuffed with fillings like squash blossom, cactus, mushrooms, peppers, and huitlacoche, a corn fungus that’s highly prized for its rich flavor.
Prepare a side dish to go with the meal, cooking beans or rice with tomatoes and chickpeas, then join your teacher for the homey meal. This is the perfect time to explore Mexican cuisine, ask about your favorite ingredients and meals, or discuss Mexico’s constantly evolving gastronomy, and at the end of the meal, you’ll receive recipes to keep and prepare at home.

We were introduced to some new and interesting and yummy! local foods in our class with Alda. The cooking techniques, however, were basic and familiar to all of us.Given the simplicity of the cooking techniques, we felt the class was overpriced, especially considering the general cost of everything else in Mexico City. Alda was knowledgeable and charming, the house was beautiful, and the final meal was delicious.
