We did a cooking class with Fulvio and Katia of a traditional Tuscan meal. They were warm and welcoming and SO knowledgeable about food, preparation, history and culture. It was a great hands on class and we enjoyed every minute of it. We made 4 fresh and simple appetizers, ravioli, and tirimasu. wine pairings with each course. 2 lessons learned: 1) never mix garlic and onions in the same dish 2) Italians don't eat bread with pasta together. Loved it and highly recommend it

Our experience with Fulvio was amazing. He was entertaining, friendly, and a great host. The atmosphere and the countryside added much charm. This was a great experience with an authentic Italian chef.

For my birthday, we pre-booked this cooking class. To our surprise it was in our hosts' home overlooking her olive oil farm. The drive there and her farm were beautiful!
It was almost like a private cooking class because there was only one other guest. We learned how to make homemade pasta, two types of sauces, a meat course, and an easy bruschetta. She started us off with a cheese platter and the bruschetta with a white wine. We each tried 3 cheeses that were aged differently. The youngest cheese was softer and we ate just as it was, the middle cheese we topped with a little onion jam, and the third cheese which was the sharpest and most aged - we topped with a little honey and fresh ground nutmeg. It was delicious!
Then we moved to the pasta and red wine. We had one pasta that was homemade and we created a sauce out of simply oil, garlic, tomatoes, salt, pepper, fresh rosemary, and chili flakes. It was so fresh and just slightly spicy. The second pasta sauce was made of oil, beans, fresh thyme, just a little salt, pepper, and cheese. It was creamy and I wouldn’t have thought to pair beans with pasta - amazing.
The final course was a piece of thinly sliced chicken seasoned only with salt and pepper, then laying a slice of a garlic clove and a piece of fresh sage between a piece of prosciutto. It was dredged in flour and fried in oil, served with another red wine.
We finished our class with a wonderful espresso Our host, Katia, has partnered with a university in Florence and even does olive oil tastings in the US because her product is that good 🙌 We’d recommend her class to anyone visiting Tuscany.

Delightful! Fulvio should have his own tv show. He is so much fun, exceptionally kind and an amazing teacher and chef. He taught a lot of history and technique, but it was hands on and very simple. I feel very confident going home to the US to repeat what he taught us. We were looking for a class that wasn’t based on wine tasting and this was it. Fulvio was incredibly respectful of us. He’s a gem! We met some wonderful people who were cooking with us also. All around, a wonderful afternoon. 💕

Seriously the best thing we did on our trip to Italy! Loved everything about our experience. Small intimate group setting and the family welcomed us and made us feel like they had known us forever. Food was amazing and the company was even better.
